When we say Yugen Kombucha is alive, we mean it literally.

Our kombucha is made through natural fermentation using a SCOBY — a Symbiotic Culture of Bacteria and Yeast.

During fermentation, these microorganisms:

  • Transform tea and sugar into organic acids, vitamins, and enzymes,
  • Create natural carbonation,
  • Populate the drink with billions of living cells that remain active in every bottle and can.

Because we never pasteurize, sterilize or filter these beneficial cultures stay alive and present— continuing to evolve slightly in the bottle and can, just as nature intended.

2. Why we keep it unpasteurized

Pasteurization is the industry standard — it makes things easier. But we choose the harder way, to keep our drinks alive.

They first pasteurize or microfilter their kombucha to remove all living microbes, then add back a single lab-grown strain such as Bacillus coagulans. While that bacteria’s spores can survive heat and still be marketed as “probiotic,” it’s not part of the natural kombucha ecosystem.

A simplified, single-note beverage that lacks the diversity and complexity of a true fermentation.

We don’t need pasteurization to keep our kombucha safe — the acidity of the brew naturally prevents unwanted bacteria from growing.
